Yes to all.
Don't be afraid of taking the SD card out of the phone and using it in your computer. I'm assuming you're using a mini SD card and it has a bigger housing to slip the mini into to use on the computer or tablet. If not, just plug the phone in and you should see it and it's contents as if it was a thumb drive in the My Computer area of the tablet and computer. Simply drag and drop from there.
Kindle - get the Kindle app from Amazon and same thing. Drag and drop.
Text files - any kind of text and pdf file can be read on any tablet or phone with a reader or Kindle installed.
As for durable permanent storage - get an external hard drive and save your shit on that. you should be doing regular backups of your files on one of those already.
Same drag and drop works on your camera. There is NO NEED to install special software for any of your devices.
Angry Birds - hate it? Simply uninstall it. Delete it. easy
I am all Apple products - I am told I need to use iTunes to do any of that. Bullshit. I've never installed special software that came with anything I purchased and I wasn't about to start doing so once I switched to Apple products. So, explore. Put in a blank card and put stuff you are not afraid of losing on it and play around until you're comfortable.
Also, very important so you don't lose data - make sure you properly disconnect your external devices or you risk losing all the data on them. Don't know how to do this? easy
On your laptop look at your clock. There either is an icon or an arrow that opens a little square box and in there is an icon that looks like the end of a usb cable. Hover over it and it should say, "safely remove hardware" or some shit like that. CLICK IT. now it gives you a list of what you have connected to the computer. Select the device you want to remove / unplug and when you are prompted it's safe, then you pull the umbilical cord and you're files are safe and uncorrupted.
