Sadly iOS backups are for the data only, so you're pretty much out of luck. And downgrading back to any 5.x release is virtually impossible because Apple, in all their fucktard wisdom, has iOS6 destroy the iOS5 files; including the blob files needed to even make the attempt to downgrade. So unless you used one of the jailbreaking tools to save your iOS5 blob files... you're pretty much fucked. To quote:
