The device he used to "make the guitar talk" is called a talkbox.
It goes between the amp and speaker and processes the sound through a tube. You put the tube in your mouth and play. The sound goes into your mouth and you "talk" for the guitar into a microphone.
Joe Walsh used one for Rocky Mountain Way.
One of my guitarist friends has a newer version that has its own amplifier and hooks between the guitar and amp. They let you do some really wild stuff!
