Just follow the instructions and either one should be OK. Honey cured or maple cured never really have that flavor pull through for me, but hell, once you follow the recipe, there is no mistaking the insane flavor!

Deal! I prefer the Caribbean but the houses on either side of me can probably be bought real cheap right now. Seriously cheap if you wheel and deal well. One has an old man who just doesn't give a shit and can die any time and then the other side is Dave, who is a friend, but he's living there free and the owner is a dumbass.

The salad dressing has quite a kick and I cheated and used that PF Chang's Kung Pao sauce and damn if that didn't have a kick too. Was a very spicy night!
