I have an all stainless weber grille,for the outside I use stainless steel polish when grille is cooled off and works like a champ, shelia shine is the best but expensive so I regularly use "professional easy off" then shelia shine on the tough spots.
The grates in mine are stainless as well and I do exactly what LK said. Since your scrubbing with the grain of the metal per say or extrusion lines the scratches are not noticeable. Unless your grates are polished stainless which I have never seen.
If you dont want to get that abrasive let the grates get really hot then water and papertowel while wearing a work glove it will clean it enough to cook without any residual taste of what you cooked on it before.
