Dinner! - Twitchin Kitten - 05-03-2010 We tried this recipe tonight. I didn't have the avocados but I used cucumbers and mushrooms. The bulgur acted as 'toast' for the egg's yolk and it was a really nice meal. I think I'll be eating this often. http://www.endlesssimmer.com/2007/06/19/vulgar-wheat-sunshine/ Eternal Sunshine of the Bulgur Mind With whatever greens you have on hand, mound in the middle of your plate. Add a dollop of bulgur wheat, topping that with some sauteed super-diced onions and garlic, drop some cubed avocado and then lay a sunny-side up egg (the sunshine in my life) on top. Sprinkle with some kosher salt and freshly grated black pepper. You could add a dash of olive oil and a squirt of lemon too. RE: Dinner! - Jamminitin - 05-03-2010 Looks..........interesting. Eric can attest to my cheesecake - mean guy ate the one I sent for his daughter after he snarfed down his! I just enjoy cooking is all and I guess when you do something you enjoy, you get good at it.
